This delicious pasta seems to be beyond the reach of people suffering from any food intolerances and allergies. So we decided to prepare the famous Mac and Cheese in a vegan, gluten-free and definitely healthier (and with less calories!) version.
Ingredients:
-a small onion
-5-6 spoons of oil
-salt
-1,5 glass of peeled and diced potatoes
-0,5 glass of peeled and finely cut carrot
-3 spoons of yeast flakes
-spoon of granulated garlic
-teaspoon of smoked paprika
-water or soy drink
-lemon juice
-200 g of Balviten gluten-free pasta
-hot paprika if wanted
How to prepare:
1. Chop the onion and fry it in oil.
2. Put the potatoes and carrots in salted water and cook for about 15 minutes until they are soft. Drain.
3. Add the onion, yeast flakes, garlic and paprika to the hot potatoes and carrots. Blend until the sauce is smooth - if it is too thick, add water or soy drink. Season with lemon juice and salt as desired.
4. Cook the pasta according to the instructions on the package. Drain, keep some of the pasta water.
5. Transfer the sauce to the pan and heat it by adding the water from the cooked pasta. When the consistency is satisfactory, add pasta.
6. Serve garnished with basil, freshly ground pepper or paprika flakes.
